Rev up your appetite and put on those stretchy pants because Harrah’s Resort SoCal is preparing for a takeover. No, not a bad or scary takeover. A yummy takeover! From Friday, February 22nd through Sunday, February 24th you can indulge in the sweet culinary creations of pastry chef Matt Lawa in The Buffet as he utilizes exclusive citrus provided by our local friends at Stehly Farms!
“Why local” you say? We’re so glad you asked. “Anytime we have the opportunity to use our local vendors, especially one that is so close to Harrah’s Resort SoCal, it is beneficial to both our property and the produce provider by featuring that specific farm. It creates awareness for the local offerings, supports local business and when the product is superb we can take full advantage of the high quality product that is typically found in smaller batches compared to high volume large scale farms.” says Executive Chef Israel Ortiz. “Stehly Farms produces a high quality product and concentrates on a select number of items from produce, to eggs and poultry when in season,” he adds.
With a refreshingly sweet and tart ingredient like citrus, chef Matt and his pastry team have put together an offering that truly embraces and respects the noble ingredient. “Citrus is in right now and with the seasons come the inspiration… as well as the kumquats and blood oranges” Chef Matt chuckles while discussing his culinary inspiration. “They’re a few of my favorite citrus fruits of the season. I am able to use produce that is so close to home, it excites me that I can drive by Stehly Farm each and every day.”
